This is so delicious if pesto is made using bacon grease instead of olive oil...
Ingredients:
2 or 3 zucchini
Tub of Pesto (or make your own)
16 oz Ricotta cheese
1 large very finely chopped tomatoe
Ingredients for Pesto
1 cup fresh basil leaves.
3 cloves garlic, peeled.
3 tablespoons pine nuts.
1/3 cup freshly grated Parmesan.
Kosher salt and freshly ground black pepper, to taste.
1/3 cup bacon grease or olive oil.
Directions for pesto throw everything in blender and mix.
Directions for zucchini roll ups
Grill thin slices of zucchini for no longer than 1 to 2 minutes. Remove and cool
Take 1 teaspoon of ricotta cheese and spread on zucchini slice, then spread 1 teaspoon of pesto, sprinkle 1 teaspoon of finely chopped tomatoes across zucchini slice and roll.
Place rolled zucchini slices in sheet pan and bake in preheated oven 375f for 15 minutes
Remove let cool for about 3 to 5 minutes and serve as an appetizer or side dish with any meal.
