Grilled Zucchini Pesto and Ricotta Cheese Roll Ups

This is so delicious if pesto is made using bacon grease instead of olive oil...


Ingredients:

2 or 3 zucchini

Tub of Pesto (or make your own)

16 oz Ricotta cheese

1 large very finely chopped tomatoe


Ingredients for Pesto


  1. 1 cup fresh basil leaves.

  2. 3 cloves garlic, peeled.

  3. 3 tablespoons pine nuts.

  4. 1/3 cup freshly grated Parmesan.

  5. Kosher salt and freshly ground black pepper, to taste.

  6. 1/3 cup bacon grease or olive oil.

Directions for pesto throw everything in blender and mix.


Directions for zucchini roll ups

  • Grill thin slices of zucchini for no longer than 1 to 2 minutes. Remove and cool

  • Take 1 teaspoon of ricotta cheese and spread on zucchini slice, then spread 1 teaspoon of pesto, sprinkle 1 teaspoon of finely chopped tomatoes across zucchini slice and roll.

  • Place rolled zucchini slices in sheet pan and bake in preheated oven 375f for 15 minutes

  • Remove let cool for about 3 to 5 minutes and serve as an appetizer or side dish with any meal.
